Ingredients

vegetable oil

vanilla extract

zucchini
coarsely grated, loosely packed

unbleached all purpose flour

ground cinnamon

baking soda

tsp
salt

baking powder

walnuts
chopped
Instructions
Preheat oven to 350 degrees.
Beat the eggs until frothy.
Add the sugar, oil and vanilla. Beat until the ingredients are lemon colored and frothy.
Stir in the zucchini.
Add all the rest of the ingredients except the nuts and stir to blend it all together thoroughly.
Fold in the nuts.
Pour the batter into two oiled and floured loaf pans.
Bake at 350 degrees for 1 hour.
Remove from oven and let cool for 10 minutes, then invert and remove from pan.
Continue to cool.
